SMOKED TROUT WITH FINE HERBS AND PINEAPPLE SAUCE

3 servings

Ingredients:
  • 3 of Gourmars Smoked Trout fillets 
For the Sauce:
  • ½ lb. (227 gr) of sweet ripe pineapple 
  • ¼ cup of brown sugar 
  • pinch of cinnamon  
  • clove  
  • nutmeg
  • red pepper

Directions: 

Sauce:
In a saucepan pour the pineapple, sugar, clove, on slow heat and let it reduce until a foaming consistency is reached. At that time add the red pepper, cinnamon and nutmeg to taste (if you prefer a spicy flavor, add more red pepper, until the sauce turns gold).
To the Table:

When it is time to serve, the sauce must be very hot, sprinkle the serving plates with cinnamon, place the trout fillet on top and pour a considerable amount of sweet sauce and serve very hot.



















 

SMOKED TROUT SALAD

  4 servings

Ingredients:
  • 1 5.5 oz. package of Gourmar Smoked Trout fillets
  • 1 tablespoon of tomatoes sauce
  • 6 oz. (150 grs.) chopped lettuce
  • 1/4 cup of mayonnaise
  • 2.5 oz. (70 grs. ) finely chopped celery
  • 1/2 tablespoon of onion juice
  • 1 tablespoon of chopped parsley
  • Salt and pepper
Directions:  

On a Salad pyrex set the lettuce leaves, then place on top and in the middle, the chopped Smoked Trout.

Pour the tomatoes sauce over the Smoked Trout, add the onion juice.

Cover thoroughly with chopped celery, spread the mayonnaise and sprinkle chopped parsley.
